One of my favorite things about working from home is that I have the flexibility to prepare my meals when I want them, but one of the most depressing things about working from home is sitting around by myself for long stretches of time. Where bringing my own lunch to work used to be an excuse to escape everyone and go sit by myself, now eating my own lunch just means being alone even more in my house.
So I balance it out with some meal (and coffee and kombucha) trips out.

I’m on a major oats kick this summer. I eat mine chilled (don’t panic, it’s good) and then top with assorted goodness. This particular bowl was PB&J. My standard oat mix is: 1/2 cup oats, 1 tablespoon chia seeds, sprinkle of cinnamon, 1 mashed banana, 1 cup almond milk. Refrigerate for at least 30 minutes (or as long as overnight). For the berries I just keep a bag of frozen ones on hand and microwave them for a minute. My favorite.
I’m hot and cold with yogurt. Sometimes it makes me want to die and sometimes I love it. This was an on day so I had it with chia seeds, walnuts, blueberries, honey and cinnamon. Keeps me full forever.
I’m a big fan of Beyond Meat as far as processed fake meats go. Their products are made from a pea protein isolate and they’ve actually tagged themselves as “real meat, 100% plant based” which I think is pretty bold. They say they’re “meat” because they believe they’ve replicated the amino acid, fat, carbohydrate, mineral and water structure of real meat but did so using plants. Their chicken is too chicken-like for me and really freaks me out but I like the beef crumbles in my rice and beans.
I intended to give this raw vegan mousse cake to my business partner for his birthday but then I didn’t see him that day so I just ate it. (Don’t even be friends with me.) If you’re in CLT, I got it at Healthy Home Market Plaza Midwood. Killer. Made me realize all my raw vegan desserts suck in comparison.
This is the Buddha Bowl from Fern and it saved my life in the midst of my post-thirtieth birthday party hangover on Friday. Ugh. I didn’t really feel the usual effects of a regular hangover but I definitely felt exhausted and run down all day.
