5 Breakfasts / Morning Snacks

Happy Thursday to you. I did my first Bar Method class this morning. They’re opening a new location in Charlotte and offering free community classes in a temp space during construction so I went to check it out. I’m a big fan of barre in general but my hands down favorite is definitely Flybarre. I haven’t done it in at least a year because I’m just a YMCA gym rat now, but I give two thumbs up to barre workouts.

Anyway, here are five breakfast ideas if you’re in a morning food rut…

I’m in a routine of eating breakfast when I get up and am done with my early morning work (I run our social stuff from about 6-7:30a) and then I eat another second breakfast (morning snack) around 11 or so. These are all from the last week or so and were either my breakfast or my morning snack…

Yogurt with “baked” apples

This is such a hoax. I just dice up an apple, sprinkle with cinnamon and nutmeg, splash with vanilla and then microwave for 90 seconds. Then I plop it on greek yogurt and drizzle with honey. Looks fancy, is not.

Baked peanut butter banana oatmeal

This is the greatest. I like to eat my oatmeal cold (sorry) but sometimes I’m in the mood to bake it in a little ramekin. I just take the same mix I eat cold, pour it in a greased dish and bake on 350 for like 15 minutes. The mix is 1/2 cup oats, 1 mashed banana, 1 cup almond milk, 1 tablespoon peanut butter, sprinkle of cinnamon.

Egg and spinach sandwich

I’m weird about eggs and find the yolk (smell, appearance, everything) completely revolting even when fully cooked so I only do the whites. I just mix three egg whites with some frozen spinach and then cook omelet style in a skillet (which means severely over-cooked for me). I eat it as a sandwich with two pieces of toast.

Peanut butter chocolate smoothie

All you need is 1 frozen banana, 2 cups almond milk, 1 tablespoon unsweetened cocoa powder, 1 tablespoon peanut butter, 1/2 cup oats, optional protein powder. Throw it all in the blender and blend until smooth.

Berry parfait

For this I took half a cup of frozen blueberries and raspberries and microwaved them for 90 seconds. Then I layered the warm berries with a Greek yogurt, 1/4 cup oats, 1/4 cup walnuts and some honey.

  2. this is kinda random but my fave bkfst recipe (or dessert) is to mix a serving of frozen berries, 1/3ish C oats and 2 tbsp almond or peanut butter, mix, microwave for 2 minutes, mix and microwave for 2 more.. SO SO good and so so fast. If I’m feeling fancy, I’ll even add a few choc chips. Please try and report back so that I know whether only I think this is amazing or not
