I had two apples on their last leg in the fruit basket so I decided to upgrade them to a quick and easy crisp to spare them further biodegradation. This is my solution to any produce that’s past it’s prime. I’m like: “Ehhhh just cook it. It’ll be fine.” And it usually is.

Apple Crisp with Peanut Butter Oat Crumble
- 2 apples, diced
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- sprinkle of nutmeg
- sprinkle of cloves
- 1 tablespoon date syrup
- 1 tablespoon coconut oil, melted
Peanut Butter Oat Crumble
- 1/2 cup rolled oats
- 1 tablespoon peanut butter
- 1 tablespoon coconut oil
Preheat the oven to 350 degrees. Combine all the baked apple ingredients in a bowl and stir to coat the apples in the spices and seasoning. Pour into a loaf pan. Now combine the peanut butter oat crumble ingredients in a bowl and stir to combine. Top apples with the crumble and bake for about 20 minutes until the apples are fork tender and the crumble is crispy.
If you’re feeling feisty you could go a la mode with a scoop of banana soft serve or your favorite ice cream.
