Emergency White Chocolate Almond Butter Cups

I’m at least four years behind the times but I have finally hopped on the blogger-obsessed Barney Butter train. I like to buy expensive gourmet food items on the cheap at Marshall’s and that’s where I found this beloved jar of raw almond butter + chia seeds that I have consumed by myself in less than a week. I can’t put my finger on it or really describe it but something about it tastes like a holiday cookie from my childhood–like shortbread or Christmas cookies or something. It’s perfect.

In the last week I’ve added a nightly ritual of spoonful of this with a handful of white chocolate chips into my life. I like the combo so much I decided to make cups out of it.

This is a small batch, need-it-right-now kind of recipe for when you’re in a dessert emergency. Because those do exist.

White Chocolate Almond Butter Cups

Ingredients

  • 2 tablespoons almond butter
  • 1 teaspoon coconut oil
  • 2 tablespoons white chocolate chips
  • 1 teaspoon coconut oil
  • 1-2 teaspoons almond milk

Instructions

Combine almond butter and coconut oil (I microwave 30 seconds to make it stir-able) and spoon into six mini cupcake liners. Place in the freezer to set at least 10-15 minutes. When the almond butter layer is set, combine white chocolate chips, coconut oil and almond milk in a bowl and microwave for 30 seconds. Stir to combine and then top each cup with the white chocolate mix. Freeze at least 2 hours to set.

  1. Trader Joes sells a crunchy peanut butter with chia seeds & I love it. I wonder how it compares to this almond butter with chia seeds…I live much closer to a Home Goods than a Trader Joes, so I’ll look for the Barney Butter.

      I’ve had that TJ’s chia peanut butter too. It’s good but this Barney Butter is out of this world. Definitely worth the hunt. 🙂

    If I don’t have cupcake liners, do you think they would stick to the cupcake tin?

      Yes, I think it will definitely get stuck. You might be able to pop them out if you freeze them first.
