Vegan Peppermint Chocolate Bars

I used to do the mint-chocolate combo ALL the time. I’d make mint chocolate brownies and mint chocolate iced coffees and basically just inhale Peppermint Patties and Andes mints at every turn. Since this is still one of the best flavor combos ever created, I decided to give it a go as a vegan bar.

You’ve got the standard raw brownie base, a coconut mint cream center (trust me) and a crunchy chocolate coating.

Verdict: success.

Vegan Peppermint Chocolate Bars

Brownie Layer

Ingredients

  • 16 medjool dates, pitted, soaked and drained
  • 1/4 cup unsweetened cocoa powder
  • 1 tablespoon coconut oil
  • 1/4 cup cashew meal
  • 1 teaspoon vanilla extract

Instructions

  1. Combine all ingredients in a blender or food processor and process until smooth.
  2. Line a loaf pan with plastic wrap and spread batter into pan.
  3. Freeze while preparing remaining layers.

Mint Cream Layer

Ingredients

  • 1/2 cup full fat coconut cream
  • 1 tablespoon date syrup
  • 1 teaspoon peppermint extract
  • 1 tablespoon coconut oil

Combine all ingredients in a food processor and process until smooth. Pour over the brownie layer and freeze to set.

Chocolate Top Layer

Ingredients

  • 2 tablespoons coconut oil
  • 2 tablespoons full fat coconut cream
  • 1/4 cup unsweetened cocoa powder
  • 1 tablespoon date syrup
  • 1 teaspoon peppermint extract

Combine all ingredients in a microwave-safe bowl. Warm for 30 seconds, stir to combine, and pour over the mint cream layer. Freeze to set for at least one hour.

It was 70 degrees and sunny on Sunday when I made these and they felt extra appropriate given the weather. They’ll make an excellent frozen summer treat whenever that splendid season decides to creep back around. Until then…

  1. Haha winter doesn’t hold me back from eating frozen treats either 🙂 The mint chocolate combination is one of my favourites and these look fantastic. So decadent and dense! They wouldn’t last an hour…

  2. Raw desserts for the win! As much as I adore regular desserts, there’s something so sinfully delicious about a decadent dessert that’s secretly filled with delicious & nutritious ingredients without sacrificing taste. Thanks for sharing!

      Yes! I love raw desserts. I think they’re better than the real thing. I think there’s a common misconception that they’re light or “diet” but they’re equally as dense and satisfying. They’re still a treat but with hidden goodness.
