I wanted to revisit vegan banana soft serve (also known as “nicecream”) because as pervasive as it is in the food blogging and Instagram world, every time I mention it (online or in real life) there is someone who hasn’t heard of it and whose life is forever improved. So let’s keep spreading the good word.
I first heard about one-ingredient raw vegan banana soft serve from Gena at Choosing Raw in a post titled This Post Will Change Your Life. It did.
Pure banana soft serve is nothing more than a frozen banana pureed in a blender into a smooth, creamy, ice cream-like consistency. BUT… the flavor possibilities are endless when you start blending in assorted fruits, chocolate, coconut, peanut butter and so on. You can also layer the nicecream over chilled overnight oats, and Angela at Oh She Glows is the expert on that.
The other night I introduced Nick to the wonder that is nicecream and he is now a believer. His first try (which is what you see in the glorious swirled photo above) was made with:
- 1 frozen banana
- 1 tablespoon peanut butter
- 1 tablespoon full fat coconut cream
- 1 tablespoon unsweetened cocoa powder
- 1 tablespoon unsweetened almond milk (to get it to combine)
You just throw it all in a blender and process until smooth.
After making this for him I got jealous and wanted my own so I made the same thing for breakfast the next day and layered it over overnight oats (1/3 cup oats, 1/2 cup almond milk, 1 tablespoon chia seeds, cinnamon) topped with berries and coconut chips.
