This spiced caramel apple crisp is vegan, free of added sugars, full of the season’s favorite spices and totally breakfast approved.

Easy Vegan Spiced Caramel Apple Crisp

Ingredients

  • 6 medjool dates, pitted and soaked
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon cloves
  • 1 tablespoon nondairy milk
  • 4 small apples, diced
  • 1/2 cup oats
  • 1 tablespoon coconut oil
  • 1/2 teaspoon cinnamon
  • brown sugar, optional
  • vegan whipped cream, optional (strongly recommended)

Soak six medjool dates in water for about two hours. Combine dates, 2 tablespoons of the reserved soaking water and 1/4 teaspoon each of nutmeg, cinnamon and cloves into a blender or food processor. Add 1 tablespoon of nondairy milk and process until a smooth caramel forms.

Dice up apples. I used four very small ones so you could probably do 3 medium, 2 large… You get it. You’ll end up with about 2 cups of diced apple.

Combine the apples with the caramel and pour into a greased dish. I used a loaf pan and greased it with coconut oil.

In a separate bowl, combine 1/2 cup of rolled oats with one tablespoon coconut oil and 1/2 teaspoon cinnamon. (If you are down with added sugar, add a few tablespoons of brown sugar to this. If not, it’s fine without it.) Sprinkle oat mixture over the apples and bake at 350 degrees for 30 minutes.

That’s it. Pretty awesome, right? Now you just need some vegan whipped cream

If you’ve never made date caramel you need to give a go. It’s super easy and more deceptive than you’d think. Dates are incredibly sweet on their own making them an excellent replacement for all the added sugar that would normally go into something like this.
