I don’t like making wraps at home because it’s always a disaster. But if I’ve learned anything from Chipotle it’s that the best and only way to cram a whole bunch of filling into one flimsy piece of bread is to reinforce it with foil. Duh.
So today before yoga I threw all the leftovers I had into a whole wheat tortilla, reinforced it with foil, and reaped the benefits of not spilling shit all over the place. It was delightful.
Goddess Lentil Wrap
- Whole wheat tortilla
- Kale and brussel sprout mix
- Goddess dressing
I’m trying to go easy on the soy intake so I’m heavy on the legumes + nuts + whole grains deal, which feels a lot better. Not to say I don’t eat a solid amount of soy; I just don’t want it in every single meal.
Despite being good as hell, this wrap was barely a blip on an action-packed weekend…
Friday was my brother’s birthday so we celebrated at a BBQ joint, which means I ate fried pickles and macaroni and cheese and hushpuppies. Sacrificial vegetarian.
Saturday was a surprise bridal shower for my friend Brittany. File Providence Country Club under “Places I Don’t Fit In.” It was a lovely event complete with big floppy hats.
And today was a family outing to the Knights game–my niece’s first sporting event. She did great. My sister moved into Charlotte earlier this month so having all my siblings here is officially awesome.
