OH HELL YES.
I invite you to read this post to the tune of Iggy Azalea “Change Your Life” because that’s what I’m about to do.
If you’ve ever thought to yourself “Hey fruit is cool but I wish it grew stuffed with peanut butter and covered in chocolate” then you and I are friends and I have something awesome for you.
I spend a sizable amount of my time dipping fruit straight into peanut butter and chocolate chips so I finally just decided to make this happen. It’s more process than recipe since it’s literally just figs, chocolate and peanut butter, but humor me and let’s do this…
You’re going to need:
- 12 dried figs (2 of them are for you to eat while working you’re welcome)
- 1/4 cup almond butter
- 1/3 cup dark chocolate chips
- 2 tablespoons nondairy milk
- 1 teaspoon coconut oil
If you’re fancy and have a piping bag you could probably pipe almond butter straight into the figs using that, but I’m not so I used a Ziploc bag. Start by using a toothpick to create a hole in the fig. Insert in the bottom and wiggle it around to create a little fig cavern to fill with almond butter. Put the almond butter in a Ziploc bag, trim off one corner and then pipe it into the fig. Combine the chocolate, milk and coconut oil in a bowl and microwave for 1 minute. Stir until smooth and then dip each fig into the chocolate. As noted above, two of the almond-butter-stuffed figs are for you to use to scrape the remaining chocolate out of the bowl and consume. Don’t skip that step. Arrange figs on a tray and refrigerate until the chocolate sets.
You end up with a delicious chocolatey geode. You are all the way welcome.
