You know when inanimate objects are trying to ruin your life? Me too.
So there is this interstate that encircles Charlotte like a ring of hellfire. You’ve probably heard about it because any time I’m anywhere near it I have a public temper tantrum. I do everything in my power to avoid I-485, and if it were a person I would punch it in its stupid face. But some days I just can’t avoid it, and today was that day. At rush hour. With no air conditioning. In North Carolina.
I decided I had two choices on this fateful voyage: 1) unleash a rage of fury and frustration upon the only person who would listen and suffer (myself) OR… 2) dance around shamelessly to all the fun new songs on the radio right now.
I chose dancing.
By the time I got to dinner with my mom, uncle, brother and niece, I had already sweat straight through everything I was wearing. It’s hard to tell if it was from un-airconditioned Carolina heat or just dancing really hard in a seated position, but one thing is certain: I won this round, 485.
I don’t know about you but I think this little happy-go-lucky lemon smoothie is bopping right along to Iggy Azalea too. Taste this gold…
Vanilla Lemon Chia Smoothie with Coconut Cream
- 1 frozen banana
- juice of 1 lemon
- 2 cups almond milk
- 1 scoop vanilla protein powder
- 1 tablespoon chia seeds
- 2 tablespoons coconut whipped cream
- Combine banana, lemon juice, milk and protein powder in a blender and process until smooth
- Pour into bowl or cup and top with chia seeds and coconut whipped cream
That girl is Beyonce-cool to me.
