I like a breakfast beverage I can make in a cocktail shaker. Adds a little fancypants to a frazzled Wednesday morning.
I went on a slow, heavy, dreadful run this morning and hot coffee just was not going to happen afterwards. Enter the light, refreshing mint chocolate iced coffee of your dreams.
There’s really not a whole lot going on here. It’s just iced coffee with cocoa powder, mint extract and almond milk. You could certainly brew and chill your own coffee, but ain’t nobody got time for that. Plus you can find cold brew coffee anywhere from hipster coffee shops to grocery store giants across the city at this point so why not?
You could play with the ratios, but for my ice coffee I do:
1 cup iced coffee + 2/3 cup almond milk + 1 tablespoon coconut creamer + 2 teaspoons cocoa powder + couple drops of mint extract
Put it all in a cocktail shaker with ice and shake like crazy. (Sweetener is optional. I go without it.)
