Quick Mini Pizza

Finding one thing  I love so much that I drown myself in it until I’m near suffocation is pretty much always my modus operandi when it comes to work, relationships and food. Work until I want to cry? Sure! Love until I can’t breathe? Standard! Eat the exact same thing for two weeks and then never eat it again… Yep! Some might call this manic. I call it Tuesday.

What I’m saying is I’ve eaten pizza three out of my last four meals and I’m just not worried about it.

Quick Mini Pizza

Pizza purists will tell you that this pizza is not pizza. In my opinion, if it includes a bread-like substance, tomato sauce, toppings and cheese… it’s a damn pizza. As always, you can use any toppings and cheese you want. I find that blistered tomatoes and charred broccoli will never do you wrong. After 27 years of blind hate, I finally tried goat cheese and learned that it is the greatest cheese of all time so I went with that to make up for lost time.

Ingredients

  • 1 whole grain tortilla
  • 6-8 cherry tomatoes
  • 1/2 cup broccoli florets
  • 2 tablespoons olive oil
  • salt
  • 1/4 cup marinara sauce
  • goat cheese

Instructions

  1. Preheat oven to 425 degrees
  2. Toss tomatoes and broccoli in olive oil, arrange on a greased baking sheet and bake for 15-18 minutes or until charred. Season with salt.
  3. Place tortilla on the top rack in the oven for the last 4-6 minutes of vegetable roasting until it is lightly browned and crispy.
  4. Top tortilla with marinara sauce, roasted vegetables and goat cheese, and put back in the oven under the broiler for 3 minutes.

I think I ran straight into the arms of pizza after a long weekend at the beach with my family because while there I ate nothing but soysages because no one would make me vegetarian food. Life is hard.
